Rum Butterscotch Sauce

I have a thing for homemade butterscotch sauce. Brown sugar, butter, cream... what's not to like?
So, when my husband requested something to go with ice-cream for a team-build function he was organising, naturally that was my first thought. But he wanted something with a "punch". Yes, it's that kind of an event...
Hence the addition of the rum.

I added a little more rum than the original recipe called for.
Um ... like double.
But it's not rum butterscotch sauce unless you can taste the rum right?!




Rum Butterscotch Sauce 
Recipe adapted from Epicurious 

200g light brown sugar
60g golden syrup
60g butter
125ml cream (35-40% fat content)
1 tsp vanilla extract
40ml rum, or to taste

Combine the sugar, golden syrup and butter together in a small heavy-based saucepan.
Cook on medium-high heat.
Stir continuously until the sugar crystals have dissolved.
Brush any stray crystals down the side of the saucepan with a pastry brush dipped in water.
Allow to boil for 10 minutes undisturbed.
Remove from the heat and stir in the vanilla, cream and rum. (Be careful: the mixture will bubble vigorously and rise up in the saucepan.)
Serve warm or at room temperature.
Store in the refrigerator for up to 2 months.




It pairs deliciously with chocolate and vanilla cakes and ice-cream. Imagine it as a secret centre for cupcakes, and a fill for macarons. Or [coming soon to a blog near you] swirled in a cheesecake ...

TTSM // Update & Plans

Hello!  It's been a while - thanks for your patience and for sticking with this unexpected (and unexplained, as yet) absence.  I have felt it!  Today's post is a quick update on all things TTSM and plan for the future.  Back in May, my apartment contract came to an end and after 7 years renting, I decided to take the big first step on to the property ladder and try to buy.  I packed up and moved back in with my wonderful parents whilst I searched.  This included packing up all art, kitchen and craft items and making anything has been almost impossible [and difficult for me!].

After 4 months or viewings, being gazumped and nearly giving up, I finally found and had an offer accepted on the house - I'm hoping I'll be in by November.  There's much to be done, so expect a few large-scale house projects to make their way to the blog too.

On to the blog - I have big plans for this space.  An enforced break has meant I can think, procrastinate and think some more about these plans: regular content, features, collaborations and a much more joined up community here, on Facebook, Instagram and a branch in to YouTube.  
I've also started the process of opening a shop.

To mark all this, there is a lot of re-design going on behind the scenes and - dependent on my move - I hope to have this lined up for my favourite time of year.

Nautical Cupcakes: Fondant Reef Knot

I was neither a Brownie nor a Girl Scout. I can tie two basic knots (and often have to pause as I ponder the next loop...)
But baking and decorating stretches your abilities in many different ways, and I can now proudly claim to have mastered the reef knot!
But only in sugar paste...
Which is good enough for this landlubber!

Nautical Cupcakes


Sugar-paste Reef Knot - made from a fondant / modelling chocolate blend.




Roll out two long strands of paste

Loop them

Overlap

Feed the ends of the top one down and through the loop of the bottom one
Bring the ends of the bottom one up and through the top one's loop

Tighten 

Trim off the messy ends (if you wait for your fondant/ modelling chocolate to set up a little, the ends won't be as squashed as they are in the pictures - I was rushing for the tutorial!)

Ode to Autumn

Good day, my lovely readers! I dislike having long breaks in between my blog posts, but I also feel as though forcing myself to churn out content would be detrimental to its quality. Still, I'm going to work harder to be a little more disciplined about my writing. It's something I truly enjoy doing, and I think it deserves to have some more of my time devoted to it. Anyway... I'm back with some more musings.

In the month or so since my last post, the seasons have been changing. September is my favourite month, not only because it's when my birthday falls, but because it's when the first little whispers of autumn fill the air. My house is surrounded by trees and greenery, and it is all beginning to change colour, with the first magical golden leaves appearing. I don't quite know why I feel so drawn to this season. Maybe it's because it's always so short and sweet, full of colour and vibrancy. Fail to take notice and you might miss it entirely. Perhaps it's that bittersweet feeling I feel every time it ends that makes it all the more special to me. When you know you only have a limited time to enjoy something, it motivates you to go out of your way to make every second count, and stops you from ever taking it for granted.

It is this time of year I seem to spend the most time outdoors, going on walks and bike rides, and taking pictures of as many crimson leaves as I can find. I love this in-between temperature, where it's too warm to wear a coat, but too mild to leave the house without throwing on a cardigan before you leave the house. 

As you may have guessed by this point, I am autumn obsessed. Therefore, it is only sensible I share with you some ideas for making the most of this season, so you can join in with my fall fanaticism.

  • If you have rich, or earthy colours in your wardrobe, now is the perfect time to wear them! If you are into mori fashion, this season is surely where you will feel most in your element.
  • If you're into tea, why not try out some new flavours? I've recently discovered there is such thing as gingerbread tea and I fully intend to get in on the action.
  • Organise a lolita woodland ramble! If you live somewhere with a lot of wooded areas, it could be a nice change of pace to go on an autumnal outing with your friends. You could collect pine cones, and horse chestnuts for decorative purposes if you're into that kind of thing. I know I am.
  • Take lots of pictures. Could this season be any more beautiful for vibrant, atmospheric photoshoots!? That contrast between the fiery leaves on the trees, and the perfectly clear blue sky always makes for some breathtaking images.
  • Get started on your themed lolita coordinate for Halloween! I love to see broken dolls, tasteful guro, witchy outfits, and vampirey gothic looks. It's one day of the year you can be truly outrageous and imaginative with your coordinate as you won't look out of place to people outside of the fashion!
  • Do some baking. Make spookily-decorated Halloween biscuits or share out fairy cakes at your next meetup. Have a go at deliciously warm apple pies or crumbles, and rich pumpkin desserts.
  • Are you a scrapbook lover? Why not try adding pressed autumn leaves to your pages, and creating fun earthy mood boards.
  • Go antique shopping! There's something so cosy and nostalgic about visiting secondhand shops. Perhaps you will find some new items to match the decor of your living space, or even a loliable item of clothing, depending on what kind of shop it is.

  • Put together a Halloween meetup! You could visit a themed cafĂ©, go on a local ghost walk, carve pumpkins (though make sure you have a cute apron on hand!) or host a movie night with your closest friends in your community! I personally like to do tarot reading on this day!
  • Visit a local craft fair or event. These are fun places to browse and perhaps take home a special, unique item for yourself or someone you love.
  • Channel some autumnal vibes into your creative outlet of choice. Make a vivid, nature inspired painting, write story set during this season, record a song inspired by your feelings during this season, or do a themed photoshoot. The possibilities for self expression are endless.
  • Have a calm, quiet day to yourself to simply breathe in the fresh, earthy air and savour the gentle sunshine on your face. 

Many of these tips are based on the things I did last year and really enjoyed. I loved my university town. It was small, quaint, and filled with unusual independent shops, pop up markets, old listed buildings, and picturesque scenery. I can't help missing some of the places I used to haunt at this time of year, such as Secret Messages (click here to wander around the shop's three levels!) and the footpaths that weaved all around-- alongside the river, through woodland, and onto an abandoned railway bridge from which you had a clear view of the entire town. Oh, sweet nostalgia! Last autumn was a truly gorgeous time in my life, and I'm glad I captured so much of it through lovingly taken photographs. I can only hope I will be able to add some whimsy to life here in my hometown, where one has to do a bit more digging to find its beauty and quirks. I like the challenge, though, and hope to follow the suggestions from the above list I haven't tried here yet!

I overuse this photo, but it's probably my favourite non lolita picture of me, taken on Halloween 2014. It's so expressive of my love for this season (and for 90s style lunchboxes). I could have looked at those leaves all day long.

Lumpia Bihun

Lumpia bagi buntik jajanan yang satu ini akrab di telinga hanya saja makanan ini cenderung lebih banyak didapatkan di daerah Jawa Tengah terutama Semarang dan memang berasal dari sinilah jajanan ini lahir. Bagi buntik yang penasaran berikut kami sajikan resep baru ala dapur bunda Lumpia Bihun, selamat mencoba.


Bahan kulit:
Telur                       2 btr
Garam                    1/2 sdt
Tepung terigu         200 gr
Tepung tapioka       1 sdm
Air                           350 ml
Margarin                 2 sdm


Isi:
Margarin                                      5 sdm
Bawang putih cincang                 4 siung
Daging ayam cincang                  200 gr
Bihun ( siram air panas )             200 gr
wortel dipotong korek api           2 btng
Jamur merang dipotong potong  100 gr
Garam                                          secukupnya
Merica                                          secukupnya
Gula                                              secukupnya
Telur goreng orek                         2 btr
Daun bawang seledry diiris          2 sdm
Kecap manis                                 2 sm
Kecap asin                                    1 sdm
Telur kocok lepas                          2 btr
Tepung panir                                 secukupnya   
Minyak goreng
Pelengkap sambel botol

Cara membuat:
Campur telur,garam, tepung terigu, tepung tapioka, air, margarin kocok lembut.
Panaskan panci anti lengket, dadar adonan sampai matang.
Beri 2 sdm isian. Gulung, celup telur, gulingkan di tepung panir, goreng.
Sajikan selagi hangat dengan sambal botol.

Isi:
Panaskan margarin, tumis bawang sampai harum.
Masukkan ayam, air, aduk-aduk.
Masukkan bihun, wortel, jamur, garam, merica, gula, telur orek, daun bawang seledry, kecap manis, kecap asin. Aduk-aduk sampai matang. Selamat mencoba. Resep by Ala Dapur Bunda

Western Themed Cookies

It was Grandparents Day at my daughter's school this week; and the last one that I'll be involved in. *Sob!*
Next year she'll be joining her brother at "big school" and while they still host a Grandparents Day there, it's not the big event that it is for the pre-schoolers.
And it really is an event - there's a marquee and music (courtesy of the kids); decorated tables and waitresses (moms); lots of good food and good fun.
And there's always a theme.
This year it was "Western". So I made a few sets of decorated cookies for gifts and lucky-draws.



It's such a fun theme to decorate. Why haven't I done it before? The closest I've got is Mexican. 
But Western is now definitely on the list of classes-to-do for next year. Yee-haw
